Udon in Clams & Light Miso Soup

This is an incredibly easy-to-make, sweet and savoury broth that can be prepared in just 30 minutes for a quick meal. The broth is made by simmering Kombu and clams, then adding rich white miso for a fresh, sweet flavour. After enjoying the udon noodles, don’t forget to drink up the remaining broth!



Ingredients (serve 2)

 

Clams

600g

Udon

2 pcs

Cabbage

¼ bulb

Fresh Kombu

100g

White Miso

2 tbsp

Salt

1 pinch

Ground Black Pepper

1 pinch


Steps

 
1. Cut the cabbage into two thick slices.

2.Heat a bit of olive oil over medium heat, and place the cabbage slices in the pan. Sear until both sides are lightly charred or tender. Season with a little salt and black pepper.

3. Bring a pot of water to a boil, add the udon noodles, and cook until they are separated. Drain and place the noodles into a bowl.

4. Discard the water used to cook the udon. In a separate pot, bring a new pot of water to a boil, then add the kombu and white miso. Cook until the miso is completely dissolved.

5. Add the clams and cook until all the clams have opened, then turn off the heat.

6. Place all the ingredients on top of the udon noodles and pour the miso soup over them. Enjoy!
