Tomato Ketchup

Steps

 
1. Wash and cut the tomatoes into pieces.

2. Over medium heat, add a small amount of oil and sauté the tomato pieces until fragrant.

3. Add boiling water to cover the tomatoes and cook until the tomatoes are about 70% softened (approximately 13 minutes).

4. Once the tomatoes are about 70% softened, add tomato ketchup, sugar, and salt. Stir well and continue to cook for 2 minutes. Then add the cornstarch slurry and cook until it thickens, and set aside.

5. On high heat, add 2 tablespoons of oil and heat until the pan is smoking. Then turn off the heat and immediately pour in the beaten eggs.
