Sliced Pork & Pea Sprout Pot in Miso Broth - Instant warmth to enjoy in just 10 minutes

In winter, besides occasionally missing the warmth of home blankets, there's always a craving for hotpot to keep warm. This time, I recommend everyone try making this Miso Pork and Pea Shoot Hot Pot. It uses few ingredients and is very easy to cook.


Whenever I've worked a full day, dragging my tired body home, the feeling of hunger and cold hits hard. At times like these, having a quick and simple hotpot for dinner is truly ideal. This Miso Pork and Pea Shoot Hot Pot has a very low ingredient threshold, ready in under 10 minutes. After enjoying the pea shoots and pork, you can even add udon noodles to finish off as Miso Udon, ensuring a satisfying meal!





Ingredients (serve 2)

 

Sliced Pork

300g

Japanese Pea Shoot

1 package

Leek

½ stick

Garlic

1 clove

Sesame Oil

1 tbsp

Red Miso

2 tbsp

Mirin

50 ml

sake

50 ml

water

50 ml


Steps

 
1. Cut the pea shoots into thirds; thinly slice the scallions; slice the garlic.

2. Mix water, mirin, and sake together, set aside.

3. Take a saucepan, heat over medium-low heat, add sesame oil and garlic slices, sauté until fragrant, then turn off the heat.

4. Layer 1/3 of the pea shoots on the bottom of the pot, then arrange a layer of pork on top. Repeat with another layer of 1/3 pea shoots followed by another layer of pork.

5. After layering, spread red miso along the edge of the pot, then pour in the mixture of mirin, water, and sake that was prepared earlier. Cover the pot with a lid (refer to the small image) and cook over medium heat for 5-6 minutes.

6. After uncovering, add the remaining 1/3 of the pea shoots and sprinkle with sliced green onions. Cover again and cook for 1 minute before serving.

7. When eating, you can continue simmering over low heat. This not only helps maintain the temperature but also allows the miso around the edges to slowly blend completely with the broth.
