Peri Peri Wings with Cucumber Yoghurt Sauce

Spicy roasted chicken wings paired with a refreshing cucumber yogurt sauce—truly irresistible!


Peri Peri sauce is a famous African condiment, traditionally made with a variety of spices and bird’s eye chilies, which are 4-5 times hotter than Thai chilies. However, since bird’s eye chilies are hard to find in Hong Kong, this recipe uses Thai chilies as a substitute, maintaining the spicy kick! Afraid of the heat? Don’t worry—besides adjusting the amount of Bird's eye chilli to your taste, I also used pure yogurt to make a cucumber yogurt sauce. The yogurt effectively tones down the heat, and combined with the crisp cucumber, it’s incredibly refreshing and addictive!


Ingredients (serve 2)

 

Basic Ingredients

Chicken Wings

500g

Red Pepper

1 pc

Bird's eye Chilli

2 pcs

White Wine Vinegar

2 tbsp

Garlic

3 cloves

Paprika

2 tsp

Sea Salt

1 tsp

Pure Yoghurt

2 tbsp

E.V. Olive Oil

2 tbsp

Celery

few stalks

Cucumber Yoghurt Sauce

Pure Yoghurt

50g

Mayonnaise

25g

Honey

1 tsp

Sea Salt

1 pinch

Cucumber (diced)

½ stick


Steps

 
1. Place the red pepper, chilli, vinegar, garlic, paprika, sea salt, plain yogurt, and olive oil into a blender and blend until smooth.

2. Mix the marinade with the chicken wings and marinate for 20 minutes (or longer if you have time). Then preheat the oven to 190°C.

3. Place the chicken wings in the oven and bake for 30 minutes.

4. While the chicken wings are baking, prepare the yogurt dipping sauce. Mix together plain yogurt, mayonnaise, honey, sea salt, and diced cucumber until well combined.

5. Finally, wash and cut the celery into segments. Serve it with the chicken wings on a plate. Enjoy the wings and celery dipped in the cucumber yogurt sauce for excellent flavour.
