Orzo Pasta in Clam Juice - Indulge Your Sensory in Extreme Freshness

Orzo, is it a kind of rice or pasta?


It's pasta dressed up as rice! Everyone knows the pasta family is quite large, with various shapes and sizes—thick, thin, long, short, and so on. This time, we're using orzo, which looks like rice but has a texture that's about 90% similar to pasta (with the remaining 10% difference due to its shape).



This creative dish is simple to make—just simmer orzo in the broth from cooking clams. Each piece of orzo absorbs the sweet flavor of the clams, and the addition of cream cheese enhances the rich, creamy taste while complementing the clam broth. The result is outstanding, and there’s really no reason not to enjoy it!

You can substitute clams with other shellfish like cockles, razor clams, or pipis. If using clams, remember to soak them in water beforehand to expel any sand.



Ingredients

 

Clams

600g

Orzo

200g

Onion

½ bulb

Garlic

4-5 cloves

Yellow Capsicum

100g

Salt

½ tsp

Ground Black Pepper

½ tsp

Cream Cheese

2 tbsp

Parsley

1 sprig

Water

400ml


Steps

 
1. Chop the garlic, brunoise the onion and capsicum, and finely chop the parsley.

2. Add 400ml of water to a pot and bring to a boil. Then add the clams (ensuring any sand has been purged beforehand) and cook for 3-4 minutes to let the essence of the clams infuse into the water. After cooking, reserve the clam water, discarding most of the shells but keeping some.


3. In a separate pot, bring water to a boil. Once boiling, add a little olive oil and the orzo pasta. Cook for 6 minutes. After cooking, drain and set aside.

4. Heat a skillet over medium heat and add 2 tablespoons of oil. Add the garlic and onion, and sauté for 3 minutes until softened. Then, add the capsicum and orzo pasta, and mix well.

5. Add the clam juice, mix well, and bring to a boil.

6. Once boiling, add salt, black pepper, and cream cheese, mixing well. Adjust to high heat and cook until the sauce thickens to a creamy consistency, then turn off the heat.

7. After turning off the heat, add the clams and chopped parsley, mixing well before serving!
