This matcha cheesecake pancake Christmas tree is very simple to make. First, mix matcha powder into the pancake batter, which will give the pancakes a delicate green color and a unique matcha flavor. When cooking, divide the batter into several small portions to create pancakes of varying sizes, from large to small. Once cooked, add some fresh fruit and pure cream cheese to each layer of pancakes, then stack them up to complete a beautiful pancake Christmas tree.

Steps

 
1. Mix the eggs, sugar, and plain yogurt together.

2. Sift the cake flour, baking powder, and matcha powder into the yogurt mixture, then mix until smooth and well combined. Afterward, refrigerate the mixture for 10 minutes.

3. Heat the pan over low heat and brush it with a thin layer of oil. Take a large tablespoon of batter and pour it into the pan. When bubbles start to appear on the surface (about 2 minutes), flip it over and cook the other side for another 2 minutes.

4. To create the Christmas tree shape, simply reduce the amount of batter slightly for each piece, making a total of 5 pancakes.

5. Take a large bowl and add the heavy cream, 2 tablespoons of plain yogurt, and superfine sugar. Use an electric mixer to whip until stiff peaks form, then transfer the cream mixture into a piping bag.

6. Take the largest pancake and spread some cream cheese on the surface. You don’t need to fill it completely; leave about 1 cm of space around the edge of the pancake. Then, place a suitable amount of mixed berries on top of the cream. Add a small amount of cream cheese on the fruit, and then layer another pancake on top.

7. Continue layering in this manner, and at the top, pipe a small amount of cream cheese and place a whole strawberry on top. Finally, dust with powdered sugar to finish!
