Low-Carb Cauliflower Pizza with Mushroom & Mozzarella | How to make flour-free pizza?

Pizza often gives the impression of being greasy and unhealthy, but with a little creativity, it can indeed be transformed into a healthy and delicious high-fiber meal.

Cauliflower is often used in ketogenic diets, and this recipe utilizes cauliflower's characteristics to create a low-carb, high-fiber pizza.

Low-carb diets have become popular in recent years. Even if not completely overturning the traditional food pyramid learned in the past, more and more people are becoming aware of the detrimental aspects of starch. Consuming too much starch not only leads to weight gain but also spikes blood sugar levels, which is especially concerning for people with diabetes. Because of this, the ketogenic diet has emerged. Cauliflower is often used in ketogenic diets, and this recipe utilizes cauliflower's characteristics to create a low-carb, high-fiber pizza.



Cauliflower has a texture somewhat like mashed potatoes, becoming sticky when mashed, making it easy to shape into patties. However, cauliflower remains a vegetable with a certain amount of moisture. Therefore, when making cauliflower pizza crust, it's crucial to squeeze out as much moisture as possible from the cauliflower (this can be easily achieved using a piece of cheesecloth or a towel). This ensures a golden brown cauliflower crust when baked, and baking it a bit longer can achieve a slightly crispy texture.



After baking the crust, you can top it with various ingredients according to your preference. This time, I made a vegetarian version (egg and dairy-free), topping the pizza with tomato sauce, mushroom slices, fresh buffalo mozzarella, and arugula, resulting in a delicious creation. You can also add Italian ham, roasted chicken, spicy sausage, or even pineapple (apologies to Italians, Big Boy respects your culture, but I really enjoy pineapple on pizza) for different toppings. The variety is so vast that even if you eat it every day, it won't get boring. With such delicious yet guilt-free food, how can you resist trying it?




Ingredients (serve 2)

 

Cauliflower

1 whole (about 800g)

Eggs

1 bulb

salt

1 tsp

Black pepper

to taste

Tomato sauce

100 g

mushroom

2 pieces

Fresh Buffalo Mozzarella

100 g

Rocket

Garnishing


Steps

 
1. Dice the cauliflower; slice the mushrooms; and slice the buffalo mozzarella.

2. Bring a pot of water to a boil, add the cauliflower, add ½ teaspoon of salt and cook for 13 minutes.

3. Drain the cauliflower after it is cooked, press it until it becomes puree, and then let it cool for a while.

4. Preheat oven to 200°C.

5. Take a piece of cheesecloth or towel, place the cauliflower mash inside, wrap it up, and squeeze out as much moisture as possible. The more moisture you squeeze out, the easier it will be for the cauliflower crust to turn golden brown when baked.

6. After squeezing out the water, put the cauliflower puree into a bowl, add egg, ½ teaspoon of salt and a little black pepper, and mix well.

7. Place the cauliflower puree on baking paper, flatten it with a spoon, and shape it into a large round shape. Then bake in the oven for 35-40 minutes.

8. Take out the cauliflower pizza crust, apply a layer of tomato sauce on it, and then put mushroom slices and buffalo cheese slices on it. Put it back into the oven and bake for another 10-15 minutes.

9. After baking, take out the pizza and sprinkle some rocket on it.
