This summer has indeed been scorching! Sour and spicy cold dishes are a great way to revive your appetite in such heat.
This time I made a very appetizing and refreshing cold dish — Lemon Wasabi Shredded Chicken. When it comes to Wasabi shredded chicken, many people think of the street food version with Wasabi mixed with mayonnaise, which is indeed delicious but high in calories and sugar. Eating too much isn't good for health. This version of Lemon Wasabi Shredded Chicken made by BigBoy uses lemon juice and Wasabi , with the amount of Wasabi adjusted to personal preference. It's paired with sesame oil and sesame seeds, making it refreshing and appetizing. Plus, it's relatively low in calories, so you can enjoy it without worries!
For the chicken, I chose a whole chicken instead of chicken thighs because a whole chicken includes both thighs and breast, providing better texture. Additionally, I used the steaming method to cook the chicken instead of boiling it in water. Steaming chicken results in smoother meat texture, preserves the chicken's essence without it being lost in water, and allows you to retain the chicken broth. This broth can then be added to the sauce, enhancing its flavour and making it even more delicious!

Steps

Rinse the chicken and pat dry slightly. Rub salt all over the chicken. Steam for 20-25 minutes.

Juice one lemon. Slice the other lemon.

Julienne the cucumber and red chilli. Mince the garlic. Chop the cilantro.

Prepare a bowl of ice water. After steaming, reserve 4 tablespoons of the chicken broth. Place the steamed chicken into the ice water to help make the skin crispier.

While the chicken cools, prepare the sauce: Mix lemon juice, soy sauce, sesame oil, reserved steamed chicken broth, wasabi paste, minced garlic, chopped cilantro, and sesame seeds until well combined.

Once the chicken has cooled completely, shred the meat.

Assembly: In a large bowl, combine shredded chicken, julienned cucumber, and sliced red pepper. Pour in the lemon-wasabi sauce and mix well. Finally, sprinkle with more sesame seeds and garnish with lemon slices before serving.
