Ingredients (serve 2)

 

Jumbo Surf Clams

4 each

Unsalted Butter

20g

Heavy Cream

30ml

White Wine

80ml

Sugar

1 tsp

Salt

1 pinch

Lemon

2 wedges

Microgreen

to garnish


Steps

 
1. Remove half of the shell from the clams, rinse them clean, and drain the water (keeping the shells).

2. Over medium heat, heat the white wine and butter until 1/4 of the liquid evaporates.

3. Then add the cream and continue to cook until thickened. Season with sugar and salt to taste.

4. Add the clam meat and cook for 15 seconds, then remove to avoid overcooking.

5. Place the clam meat back into the shells, pour the butter and white wine sauce over them, and then garnish with microgreens and edible flowers. When ready to eat, squeeze a little lemon juice to enhance the freshness.
