Grilled Steak with Avocado Yoghurt Sauce

BigBoy isn’t on a ketogenic diet, but occasionally, after eating too richly, the next meal always seems to avoid starches. This salt-seared steak with avocado yogurt sauce is just right for that.


Avoiding starch doesn’t equate to a ketogenic diet, which strictly limits carbohydrate intake. Simply avoiding starchy foods means not consuming foods containing starch. At such times, steak is a great choice as it fills you up and provides protein. For the sauce, using pure yoghurt and avocado creates a mildly sweet and tangy avocado sauce that is not only appetizing but also beneficial for gut health.

📌When searing steak, heat the skillet until it’s hot (or smoking) to achieve a crispy exterior and tender interior.

📌The sirloin steak I bought was about 2cm thick, and searing for 1 minute 30 seconds achieves a medium-rare effect.




Ingredients (serve 2)

 

Basic Ingredients

Sirloin Steak

1 pc

Thyme

few sprigs

Sea Salt

1 tsp

Ground Black Pepper

1 tsp

Unsalted Butter

20g

Arvo Yoghurt Sauce

Pure Yoghurt

80g

Avocado

1 bulb

Honey

2 tsp

Sea Salt

1 pinch

Lemon Juice

1 tsp

Dijon Mustard

1 tsp



Steps

 
1. Season both sides of the steak with sea salt and black pepper.

2. Heat the pan over medium heat until it starts to smoke, then add a sufficient amount of cooking oil and place the steak in the pan.

3. Sear the 2cm thick steak for about 1 minute and 30 seconds on each side for a medium-rare doneness. After flipping the steak, add butter and thyme to the pan. Continuously baste the steak with the melted butter until both sides are seared to perfection.

4. Let the steak rest for at least 5 minutes before slicing.

5. To make the sauce: Scoop out the avocado flesh, add lemon juice and sea salt, and mash until smooth. Then mix in pure yoghurt, honey and mustard.

6. Strain the cheese sauce to achieve a smooth and creamy texture.

7. Place the cheese sauce on the plate first, then place the steak on top of the sauce, and finally garnish with a sprig of thyme.
