In this dish, BigBoy uses garlic and rosemary to flavour the chicken, roasting one kilogram of it in the oven for about 50 minutes. This cooking method results in a crispy skin while keeping the meat tender and juicy on the inside. Not only is this roast chicken impressive in terms of taste and texture, but it also serves as an excellent low-carb option, making it very friendly to a healthy diet.

Ingredients(serve 2)

 

Basic Ingredients:

Whole Chicken

1 each (1KG)

Extra Virgin Olive Oil

3 tbsp

Salt

2 tsp

Ground Black Pepper

2 tsp

Rosemary

2 sprigs

Garlic

7 cloves

Lemon

½ each

Sauce:

Juice from Roasting Chicken

all the juice collected

White Wine

60ml

Flour Slurry

2 tsp

Avocado Salsa:

Avocado

1 each

Cherry Tomato

6 pcs

Lebanese Cucumber

1 each

Mint Leaves

to taste

Extra Virgin Olive Oil

1 tbsp

Lemon

½ each

Salt

1 pinch


Steps

 
Get a mortar and pestle (or use a knife to crush it if you don't have one). First, add the garlic and rosemary to the pestle and crush them (see left small image). Then, add 2 tsp of salt and black pepper, 3 tbsp of extra virgin olive oil, and juice from half a lemon. Mix everything thoroughly and set aside (see right small image).

2. After washing and drying the whole chicken, cut it open along the back. Rub the freshly made garlic rosemary marinade all over the chicken, both inside and out, and let it marinate for 30 minutes. While the chicken is marinating, preheat the oven to 190°C.

3. After marinating the chicken, place it on a roasting pan with a rack or similar tool to support the chicken (such as a grill rack or metal rods). This setup will allow the chicken juices to be collected during roasting. Roast for 50-55 minutes.

4. During the chicken baking time, dice the cucumber (remove the seeds), cherry tomatoes, and avocado, and finely chop the mint.

5. Mix the cucumber, cherry tomatoes, avocado, and mint together. Add a pinch of salt, 1 tablespoon of extra virgin olive oil, and the juice of about half a lemon. Toss everything to combine.

6.Once the chicken is roasted, collect the chicken juices from the baking tray, strain them, and pour into a frying pan.

7. Turn the heat to low, add white wine and a small amount of flour-water mixture, and cook until thickened.

8. Finally, place the chicken pieces on the plate, add the avocado salsa, and drizzle with the sauce before serving.
