2-Ingredient Pitaya Yoghurt Sorbet - a vibrant and refreshing summer dessert

The summer in Hong Kong seems never-ending. As we step into September, just when we think the peak of summer is about to pass, we realize the weather is still so hot. For a while, it's unbearably scorching even until November...


Cooling off has become the top priority in the summer. Besides buying ice cream, making your own sorbet is simple and healthy. The process of making sorbet is quite straightforward; all you need are fruits and some liquid. This time, I've chosen refreshing and thirst-quenching dragon fruit as the main ingredient, mixing it with yoghurt to create a smooth-textured sorbet. Make a large batch at once, store it in the freezer, and enjoy it anytime. It's both healthy and delicious.



Ingredients

 

Pitaya

2 bulbs

Yoghurt (plain or any other flavour)

500g



Steps

 
1. Cut the dragon fruit in half and scoop out the flesh. Dice the flesh into small pieces and freeze until solid. Keep the outer shells.

2. Place the frozen dragon fruit and yoghurt into a blender and blend until fully combined.

3. Pour the mixture into a container and place it in the freezer for 4-5 hours until it reaches a sorbet consistency.

4. Take out the dragon fruit sorbet, scoop it into the reserved dragon fruit shells, and enjoy.
