With the weather being so hot, having some desserts in the fridge would be ideal. So this time, I’d like to recommend a classic yet timeless dessert that’s both delicious and incredibly easy to make: mango pudding!

Mango pudding is a sweet memory from many people’s childhoods. Whether it's at a family gathering in a restaurant or as a dessert at a birthday party, it always brings back fond memories with its rich mango aroma and smooth texture. Every time you think of that golden pudding, you can almost taste its sweet and refreshing flavor, which is simply irresistible.


In fact, making mango pudding doesn’t require complex steps or advanced culinary skills. This recipe only needs a few simple ingredients: evaporated milk, fresh mangoes, gelatine powder, and water. Evaporated milk has a lower fat content than light cream, and since it has less moisture than regular milk, using it for mango pudding results in a creamier, smoother texture, similar to the effect of using evaporated milk in milk tea. This method not only makes the pudding more delicious but also ensures that both adults and children will love this dessert.

Just a reminder: FIRST, mixing hot water and cold water in a 1:1 ratio helps the gelatine solution cool down faster. If you use only hot water, it will take longer for the solution to cool. SECOND, add the evaporated milk only after the gelatine solution has completely cooled to prevent the formation of white lumps on the surface of the pudding, which can affect its appearance and texture.




Ingredients(fill up 5 200ml cups)

 

Evaporated Milk

350g

Mango-Flavoured Jelly Powder

2 boxes (160g)

Mango (diced)

2 each (about 250g)

Hot Water

200ml

Cold Water

200ml


Steps

 
1. Add the mango-flavoured jelly powder to hot water and stir until well combined. Then add cold water and mix thoroughly. Allow it to cool completely.

2. After cooling, add the evaporated milk and mango pieces (reserve some for topping), and mix well.

3. Pour the mango pudding mixture evenly into glasses. Refrigerate for 3 to 4 hours.

4. After chilling, add more mango pieces on top and drizzle with a little evaporated milk. It’s ready to enjoy!
