When it comes to Korean cuisine, one cannot overlook Chuncheon spicy stir-fried chicken. This dish has gained widespread popularity due to its frequent appearance in Korean dramas.


When it comes to Chuncheon spicy stir-fried chicken originating from Chuncheon, South Korea, its sauce is spicy with a hint of sweetness, incredibly flavorful, and definitely pairs well with several bowls of rice. This stir-fried chicken dish isn't complicated to make and can be cooked easily at home with just a pot. Here are a few tips about Chuncheon spicy stir-fried chicken:


  1. Traditional methods use a cast iron pot for cooking. All ingredients are placed in the pot, which is then placed on the table with a gas stove. During cooking, it's common to enjoy some side dishes while waiting, making it a social cooking experience at home.

  2. Don't underestimate the use of curry powder. In fact, curry powder is the soul of this dish, elevating its flavor profile significantly.

  3. This recipe uses a cheese sauce made from half cheese and half Nestlé low-fat cottage cheese. Not only does this halve the calories, but the cheese also helps balance out the spiciness, making it ideal for those who enjoy a bit of heat but not too much.

  4. Koreans are adept at using perilla leaves (sesame leaves), which can wrap almost any food. To elevate the flavor, consider buying some perilla leaves to wrap around the chicken for a tastier experience.



Ingredients (serve 2)

 

Basic Ingredients:

Chicken Thigh

400g

Cabbage

¼ bulb

Onion

½ bulb

Carrot

1 stick

Spring Onion

1 sprig

Water

100 ml

White Sesame

1 tsp

Yoghurt Cheese Sauce:

Pure Yoghurt

3 tbsp

Mozzarella Cheese

50g

Marinade:

Korean Chilli Paste

1 tbsp

Grated Garlic

1 tbsp

Soy Sauce

1 tbsp

Sugar

1 tbsp

Sesame Oil

1 tbsp

Chilli Powder

1 tsp

Curry Powder

1 tsp


Steps

 
1. Cut the chicken thighs into chunks, slice the cabbage, cut the onion into strips, slice the carrots, and chop the Spring Onion into segments.

2. Mix the marinade and coat the chicken thighs, marinating for 30 minutes.

3. Mix pure yoghurt with mozzarella cheese and set aside.

4. Heat the pan over medium heat, add cooking oil as needed, and stir-fry the chicken thighs until the surface turns slightly golden.

5. Add the carrots first and stir-fry briefly. Then add the cabbage and stir-fry briefly as well. Next, add the onions and stir-fry briefly. Finally, add water and stir everything together.

6. When the sauce thickens, reduce the heat to low. Add the chopped green onions and mix well. Then, spread the yoghurt and cheese sauce over the surface, cover the pan, and heat until the cheese melts (about 1 minute).

7. Finally, sprinkle with white sesame seeds and it's ready to serve!
