Italian-style crab meat baked potatoes, a simple Italian-flavored dish that is so delicious you won't be able to stop eating it. Let's learn how to make it together!
When it comes to baked potatoes, many people often think of mashed potatoes. However, if mashed potatoes are too common for you, let's try something different this time (I've previously introduced a perfect mashed potato recipe; if you're interested, you can check out my creamy truffle mashed potatoes recipe). This recipe uses new potatoes, known for their thin skins that add a crispy texture when cooked with the skin on.
Start by dicing the potatoes into cubes and sautéing them directly in a pan until golden brown. This step requires some patience to ensure every side of the potato cubes turns golden brown, taking about 10-15 minutes. Sautéing them this way makes the potato cubes crispy on the outside while remaining soft inside, and they'll become even more flavorful after baking.
After sautéing the potatoes, mix in the crab meat and cheese before baking. I use canned crab meat, which retains an excellent crab flavor, cooking up with a rich crab essence that's as convenient as it is delicious. Compared to fresh crab, there's no need to worry about whether the crab flavor is sufficient when using canned crab meat. With plenty of cheese added, the final dish is irresistibly aromatic, leaving no reason not to enjoy it!

Crab Meat | 120g |

Steps
1.
Dice celery, potatoes, and carrots. Finely chop the onion.
2.
Heat a skillet over medium heat, add 3-4 tablespoons of oil, and fry the diced potatoes until golden brown (about 10-15 minutes). Set aside.
3.
In a pot, heat 2 tablespoons of oil over medium heat. Add the chopped onion and sauté for 4-5 minutes until lightly browned.
4.
Add celery and carrots, sauté briefly. Then add flour and tomato sauce, mix well.
5.
Pour in white wine, salt, black pepper, paprika, dried Italian herbs, diced potatoes, and crab meat. Cook until thickened.
6.
Preheat the oven to 180°C (350°F) while waiting for the sauce to thicken.
7.
Stir in half of the cheese, mix until melted, then turn off the heat.
8.
Transfer the potato mixture to a baking dish, sprinkle the remaining cheese on top. Bake in the oven until the cheese on top is melted and golden brown.
