Clams & Spaghetti with Garlic & Basil

Garlic pasta is one of my favorites, and adding clam meat makes it even more delicious. This time, I chose larger sweet potato clams, which not only have a better bite but also a more intense clam flavour!



Ingredients (serve 2)

 

Clams (cleaned)

600g

Spagehtti

200g

Tomato

1 bulb

Onion

½ bulb

Basil

1 sprig

Garlic

4 cloves

White Wine

100ml

Water

200ml

Salt

½ tsp



Steps

 
1. Bring a pot of water to a boil, add the pasta, and cook for 4 minutes. Then drain the water.

2. Dice the tomatoes, onions, and garlic.


3. Heat a pan over medium heat, add oil, and sauté the diced tomatoes, onions, and garlic until fragrant. After they are aromatic, add white wine and cook for 1 minute.

4. Add the clams and stir to combine. Then add water and cover the pan. Cook for 2-3 minutes until all the clam shells are open.


5. Add the pasta and toss to combine. Then add a little salt to season.

6. Turn off the heat and stir in the basil until well combined.


7. Sprinkle a little black pepper when serving
