Slice the spinach roll into bite-sized pieces for an elegant and refreshing presentation that looks as good as it tastes.

The unique sweetness and aroma of black garlic, combined with the tangy freshness of lemon juice, create a perfectly balanced sweet and sour taste. This sauce adds complexity to the spinach cold rolls, providing a fresh twist and making the dish even more special.

Basic Ingredients

Spinach

300g

Sesame

1 tsp

Ice Water

1 bowl

Black Garlic Lemon Sauce

Black Garlic

2 cloves

Lemon Juice

2 tbsp

E.V. Olive Oil

2 tbsp

Dijon Mustard

1 tsp

Salt

1 pinch

Honey

2 tsp



Steps

 
1. 菠菜洗淨,同時預備一碗冰水。另燒滾一鍋水,放入菠菜,焯30秒即可撈起。
1. Wash the spinach thoroughly and prepare a bowl of ice water. Meanwhile, bring a pot of water to a boil. Blanch the spinach for 30 seconds, then remove it immediately.

2. 菠菜煮好後馬上放入冰水內。浸5-10分鐘。
2. After cooking the spinach, immediately place it in ice water. Refresh for 5-10 minutes.

3. 中細火,白鑊炒芝麻至金黃,備用。
3. Over medium-low heat, toast the sesame seeds in a dry pan until golden brown. Set aside.

4. 取一攪拌器,放入黑蒜、檸檬汁、橄欖油、蜜糖、第戎芥末及鹽,打壓成醬(太稠的話可多加檸檬汁)。
4. Take a blender and add black garlic, lemon juice, olive oil, honey, Dijon mustard, and salt. Blend the ingredients into a sauce (if it's too thick, you can add more lemon juice).

5. 菠菜浸好後切走頭頭的根部。

6. 取一壽司蓆,上面鋪一片保鮮紙,取適量菠菜,一邊捲起,一邊輕力壓實,同時擠出水分。成形後便可解開保鮮紙。
6. Place a sushi mat on a flat surface and lay a piece of cling film over it. Take a portion of spinach and roll it up, pressing gently while rolling to remove excess water. Once it forms a firm roll, unwrap the cling film.

捲好後切段。
7. After rolling, cut into sections.

最後於碟上塗一上黑蒜檸檬醬,再放上菠菜卷,灑上芝 麻即成。
8. Finally, spread some black garlic lemon sauce on the plate, place the spinach rolls on top, and sprinkle with sesame seeds to finish.
