Ingredients(serve 2)

 

Kikkoman Soba Dressing

120ml

Chicken Breast

1 each (200g)

E.V. Olive Oil

1 tbsp

Japanese Yam

1 each

Avocado

1 each

Cherry Tomato

few pcs

Mixed Salad Leaves

to taste

Egg Yolk

2 each

White Sesame Seeds (toasted)

1 tsp


Steps

 
1. Boil a pot of water, then brush the surface of the chicken breast with a suitable amount of olive oil (see small image). Steam the chicken breast for 8-9 minutes over the boiling water. Once cooked, let it cool.

2. Dice the avocado; cut the cherry tomatoes in half; shred the chicken breast by hand. Then, mix all three ingredients together (see small image).

3. Peel the Japanese yam, but leave the ends unpeeled to use as a grip to prevent slipping. Then, shred it into thin strips using a noodle grater. If you don’t have a grater, you can use a peeler as shown in the small image.

4. After shredding the yam, immerse it in cold water to remove some of the starch and prevent it from turning brown. Soak for 5 minutes, then drain and set aside.

5. Place the yam noodles on a plate, then top with a generous amount of salad greens, cherry tomatoes, avocado, and chicken. Create a small indentation at the top for the egg yolk and sprinkle with sesame seeds. Finally, drizzle with the soba noodle sauce and serve.

6. The sauce for the soba noodles has a well-balanced flavor, rich with soy sauce and bonito aroma. Paired with the crisp yam noodles, it’s incredibly appetizing!
