Butter & Mashed Avocado on Rice

A delightful fusion of creamy and savoury, this dish features a generous layer of velvety mashed avocado atop a bed of perfectly cooked rice. The buttery richness of the avocado creates a smooth and satisfying texture. 


Remember watching the show Midnight Diner where the owner, played by Koyuki Kobayashi, served a bowl of buttered rice with a dash of soy sauce? The customers enjoyed it so much, showcasing the simple yet delightful magic of this dish! Watching that, I suddenly felt hungry and ended up making a cup of instant noodles in the middle of the night to satisfy my craving.


This time, BigBoy has created his own twist on the classic buttered rice. He has preserved the charm of the original dish while adding avocado to balance the richness of the butter. Paired with homemade sweet soy sauce, it’s truly a heavenly combination of indulgent and fresh flavours that’s irresistible. 🤤



Ingredients (per serve)

 

Rice

1 bowl

Butter

20g

Avocado

1 bulb

Egg Yolk

1 pc

Spring Onion

3 sprigs


Steps

 
1. Chop the spring onion. Separate the egg yolks from the whites (saving the whites for other dishes). And mash the avocado after removing its core.

2. Add the chopped spring onion to the cooked rice, mix well, and return it to the rice cooker, setting it to the keep-warm function.


3. Cook over low heat, stirring in the soy sauce and mirin, until slightly thickened (about 5 minutes).

4. In a bowl, first add the rice, then place a slice of butter on top (the butter will slowly melt and infuse into the rice due to its heat), and finally, add the mashed avocado.

5. Finally, add the egg yolk on top and drizzle with the homemade soy sauce, and it's ready to serve.
