Authentic Caesar Salad - How to Make a Perfect Yellowish Caesar Dressing

Since I was young, whenever I went to a restaurant, I always liked to order Caesar salad. Its crunchy texture and tangy, appetizing flavour make it a perfect appetizer.


However, authentic Caesar salad dressing is actually yellow, not white! That's right, even Big Boy was misled for many years before discovering this. This misconception has probably puzzled many people. The Caesar salad dressing served in restaurants and even the ones you buy in supermarkets are white because they contain mayonnaise. Authentic Caesar salad dressing is based on egg yolks, anchovy oil, and olive oil, resulting in a yellow dressing. Only then can it be considered traditional and authentic.

You might ask, "Why go through the trouble of making your own Caesar salad dressing when you can buy ready-made ones at the supermarket?" If you take a look at the ingredient labels on those store-bought dressings, you'll find many unnecessary additives, colourings, and even preservatives. Making your own dressing is actually quite simple and takes just 5 to 10 minutes. Considering the health benefits for you and your family, this small effort is truly worth it.



Homemade Caesar salad dressing is not only natural but also offers a different depth of flavor. The fresh garlic adds a spicy kick, the anchovy paste brings a savory saltiness, and the lemon juice provides a natural tang. Ingredients (serve 4)

 

Basic Ingredients:

Romaine lettuce

2棵

Baguette

½條

Extra Virgin Olive Oil

2湯匙

Pancetta / Bacon

2片

Parmesan Cheese Powder

適量

Caesar Dressing:

Egg Yolk

2 pcs

Lemon

½ bulb

Extra Virgin Olive Oil

4 tbsp

Anchovies / Anchovies Paste

1 tsp

Sugar

10g

Garlic

1 cloves

Salt

1 pinch

Dijon Mustard

1 tsp


Steps

 

1.

Preheat the oven to 160°C.

Dice the baguette into bite-sized pieces. Toss with 2 tablespoons of olive oil, mix well, and spread evenly on a baking tray. Bake in the oven for 20 minutes or until golden brown (Now it is called croutons).

Wash and chop the romaine lettuce, then pat dry with paper towels; mince the garlic; dice the bacon.


4.

Heat a frying pan over medium-low heat, add a little oil, and fry the bacon for 3 to 4 minutes until golden brown. Set aside.


5.

To make the Caesar dressing: Separate two eggs, keeping only the yolks (save the egg whites for other usage), then add 4 tablespoons of olive oil and mix well. Add the minced garlic, sugar, salt, mustard, anchovy paste, and lemon juice, and mix until combined.


6.

Toss the romaine lettuce, bacon, croutons, Parmesan cheese, and Caesar dressing together. Enjoy!
